PORK CHOPS, SHREDDED CABBAGE & POTATOES: I doubled this thinking I would send a meal to the couple next door. However, it was too dry. Honestly, (based on the other recipes I tried) I thought it should probably take an hour to cook rather than the hour and a half the recipe said. I also thought it should have been covered for at least the first half hour. I should have checked to see if the chops were done after 50 or 60 minutes, but I got busy with other things.However, even had the pork not been dry we still agreed that we would not have shared the meal with the neighbors. We liked it well enough to eat, but we didn't think it was good enough to share. When I asked my husband if it was worth making again, he shook his head no. However, having a second meal already made was not a bad thing.
While this didn't hit the spot with us it might have just the right flavor note for you. Just keep an eye on the clock!

I’m always looking for quick & easy recipes to serve for family dinners. I picked up this cookbook to add a little variety to my usual chicken and beef dinners.
There is a nice variety of casseroles, chops, and ham recipes. Best of all, they are all easy to prepare and sound delicious. I can’t wait to try the sausage spaghetti with mushrooms and the Alfredo potato ham casserole.
I like the fact that the recipes use easy-to-find ingredients rather than unusual ingredients that I have to search specialty stores for. A great book for busy moms on the go.
